And that’s not just lip service. In 2013, we opened the Artisan Food Factory – an 8,000 sq ft food facility dedicated to handcrafting every product we serve, from the finest locally sourced ingredients. The Artisan Food Factory also provides fresh food daily to our multi award-winning sister company, Café Noir, as well as multiple restaurants in NUI Galway, University Hospital Galway, University of Limerick, University Hospital Limerick, Thomond Park and Powerstown Park Clonmel.

The most recent addition to our business is Copia Greenan innovative new zero waste and health-driven eatery which has recently opened on the former site of Cafe Noir in Castletroy, Limerick. Copia Green’s mission is simple and clear. To create and serve inspiring vibrant sweet and savoury dishes bursting with flavour and nourishing in nutrients. To make it onto the menu each ingredient needs to be organic, seasonal or sustainable. We aim to use 75% organic and Irish produce throughout the year. Copia Green’s commitment to sustainability is conscious in every business decision we make along the consumption life-cycle; what we choose, purchase, consume and discard.
